Why Snacking Cakes Are Necessary in 2021

Let’s face it. 2020 was a rough year. I don’t need to re-traumatize us by outlining all the terrible ish we endured as a nation, we all remember it. After all, we’re only 20-something days into the new year; wounds are still fresh.
These unprecedented times (that phrase is basically a meme at this point) require new ways of adapting to our external stresses. I for one, as someone who has never enjoyed baking but always enjoyed the end result, found myself scoping out hip new recipes from Ochre Bakery and Bon Apetit. I am far from proficient, but I can proudly say I can now bake simple cakes without setting the house on fire (knock on wood).
That is why I was so excited to learn that the amazing Yossy Arefi released a new cookbook at the tail-end of 2020 (right when we needed it) entirely focused on my aforementioned beloved simple cakes, titled Snacking Cakes.
Yossy has blessed us with a treasure trove of self-care in cake form.
Based in Brooklyn, NY but hailing from Seattle, Yossy is the owner and author of the visually-delicious food photography blog Apt2B Baking Co. Here she posts original recipes for baked goods, as well as stunning shots of her creations, all on vintage film!
Mary and I were seriously inspired by her impeccable execution of creating simple, unfussy cake recipes that are equally as delicious as they are interesting. We just HAD to try the White Chocolate Grapefruit cake for our first Bake it Off series!
I can confidently say that baking the stress away with one of Yossy’s snacking cakes is a much better way to start the new year than unrealistic resolutions that only feed guilt.
